Fish Tycoon
Fish Tycoon is a very well designed app for iPod Touch and iPhone. The Lite version is free (though limited in the number of fish per tank). Your challenge is to grow, breed and sell tropical fish. You can improve your tank and skills by purchasing upgrades with your profits. The programmers claim there are 400 fish types to discover!
As well as the simple "tycoon" structure there is an added challenge to find seven special fish species with special powers. With a bit of ingenuity and patience the game can be played out in the Lite version, though it would be easier with the bigger tanks of the full game.
The fish continue to grow (or get sick) in real time, so you can enjoy this as something you come back to each day, rather than something requiring a hefty amount of play time.
